Sun-Dried Tomato + Basil Ricotta Spread

Ingredients:

  1. 1 C ricotta cheese (sheep or cow, preferably fresh)

  2. 4-6 cloves garlic, roasted

  3. 1/3 C sun-dried tomatoes

  4. A handful of fresh basil, leaves torn

  5. 4 tbsp first-cold pressed extra virgin olive oil

  6. 1 tbsp balsamic vinegar

  7. Zest ½ lemon

  8. 1-2 tsp lemon juice
